🛒 Ingredients (serves 2)

  • 400g large shrimp (peeled and deveined)
  • 200g coconut rice
  • 1 can black beans (drained and seasoned)
  • 1 ripe mango (diced)
  • 1 avocado (sliced)
  • ½ red onion (thinly sliced, pickled)
  • Fresh cilantro
  • 2 limes
  • Caribbean Marinade: 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp cumin, ½ tsp cayenne pepper, 1 tsp garlic powder, salt & pepper
  • Spicy Caribbean sauce to drizzle

  1. Mix marinade ingredients and coat shrimp. Let marinate for 20 minutes.
  2. Cook coconut rice: replace half the water with coconut milk. Season with salt.
  3. Pickle red onion: soak in lime juice with a pinch of salt for 15 minutes.
  4. Make mango salsa: combine diced mango, cilantro, lime juice, and a pinch of chili.
  5. Grill shrimp on high heat 2–3 minutes per side until charred and cooked through.
  6. Assemble bowls: coconut rice base, black beans, grilled shrimp, mango salsa, avocado, and pickled onions.
  7. Drizzle with spicy Caribbean sauce and finish with fresh cilantro and lime wedges.
