This is coastal Italian cuisine at its finest — fresh linguine tossed with premium seafood in a light white wine and garlic sauce. Simple, elegant, and unforgettable.
🛒 Ingredients (serves 2)
- 200g fresh linguine
- 8 large shrimp (peeled and deveined)
- 200g mussels (cleaned)
- 150g clams (cleaned)
- 4 large scallops
- 150g cherry tomatoes (halved)
- 3 garlic cloves (minced)
- 120ml dry white wine
- 3 tbsp extra virgin olive oil
- Fresh flat-leaf parsley (chopped)
- 1 tsp chili flakes (optional)
- Sea salt & cracked black pepper
- Lemon wedges to serve
👨🍳 Instructions
- Cook linguine in salted boiling water until al dente. Reserve ½ cup pasta water.
- In a large pan, heat olive oil over medium-high heat. Add garlic and chili flakes, cook 1 minute.
- Add scallops and shrimp, sear 2 minutes each side. Remove and set aside.
- Add mussels and clams to the pan. Pour in white wine, cover and cook 3–4 minutes until shells open.
- Add cherry tomatoes and cook 2 minutes.
- Toss in the drained linguine with a splash of pasta water. Mix well.
- Return shrimp and scallops to the pan. Toss gently.
- Plate and finish with fresh parsley, cracked black pepper, and a squeeze of lemon.
