🛒 Ingredients (serves 2)
- 400g large shrimp (peeled and deveined)
- 200g coconut rice
- 1 can black beans (drained and seasoned)
- 1 ripe mango (diced)
- 1 avocado (sliced)
- ½ red onion (thinly sliced, pickled)
- Fresh cilantro
- 2 limes
- Caribbean Marinade: 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp cumin, ½ tsp cayenne pepper, 1 tsp garlic powder, salt & pepper

- Mix marinade ingredients and coat shrimp. Let marinate for 20 minutes.
- Cook coconut rice: replace half the water with coconut milk. Season with salt.
- Pickle red onion: soak in lime juice with a pinch of salt for 15 minutes.
- Make mango salsa: combine diced mango, cilantro, lime juice, and a pinch of chili.
- Grill shrimp on high heat 2–3 minutes per side until charred and cooked through.
- Assemble bowls: coconut rice base, black beans, grilled shrimp, mango salsa, avocado, and pickled onions.
- Drizzle with spicy Caribbean sauce and finish with fresh cilantro and lime wedges.
